Every morning at 4:30 AM, our bakers are shaping sourdough. Every Friday, our meats arrive from the same Upper Manhattan purveyors they've sourced from for thirty years. The corned beef is cured for fourteen days. The bread is scored by hand. The coffee is pulled from a La Marzocca that Joe personally selected.
